At this establishment run by the experienced and emblematic restaurant owner from San Sebastián, Álvaro Manso, you will find excellent traditional cuisine by the hand of the Brazilian chef Vera María Cruz da Silva, Álvaro's wife, who trained at Luis Irizar's school. Vera has mastered the foundations of traditional Basque cuisine and works with carefully prepared seasonal produce. This well-established restaurant is also renowned for its variety of good wines, with more than 50 of them available to the public and around 300 national and international references. As regards its pintxos (tapas), there are more than 50 to choose from on its spectacular bar. Casa Vergara has won the Label Vasco prize three times in the Gipuzkoa Pintxo Contest with its "Manolo", "Mauri" and "Habanito" pintxos, as well as second prize in the contest of pintxos made with Tolosa black beans.
